Lots Going On

Last night for dinner I made Falafel for dinner and it turned out rather good! Again, had to go with the Bagel Thin since I still don't have any bread (grocery shopping night is tomorrow). I made up enough to have for the next couple of days. I love being about to pull something out, heat and eat! I also enjoyed some fresh pineapple on the side. Perfect meal for the end of the day.

I was still a little on the moody side last night and didn't sleep too well. My neighbors three houses down love to party on their patio every night....ugh, no idea what these people do for a living, but some of us work and need sleep!!

Anyway, today has been a bit better. Got out at lunch and enjoyed a nice walk and thinking about taking the evening off from any type of workout. The house is so quiet that I think a good book might be needed tonight.

So, AWESOME news!! I am working on my online store that will open in a couple of weeks to help with my donations for the 3-Day Walk and I have an AMAZING guest that is working on some inspirational designs for shirts to sell on the store!! Please keep checking my 3-Day Blog for more information to come!!

I cannot believe another weekend is almost here again. Where did this week go?? I think my daughter and I will go hiking again this weekend, i think that's like five weeks in a row for us. My mother-in-law is coming over for dinner on Saturday for her birthday.

Which leads me to this questions for any vegetarians out there - I planned this dinner before I stopped eating meat and I had planned prime rib for dinner - how do you gracefully bow out of eating meat? I worry about offending people if I make something else to eat, ok really I worry that my husband will flip out and get all pissy with me. Normally he is pretty easy going, but sometimes he takes thinks personally. Does that make since?

I have really enjoyed not eating meat for over a week now, and I truly think this is a life style I could live with. Maybe it's just time I put my big girl panties on and have a chat with my husband. I'll keep you informed.

Feeling Moody

I have been in a real moody cranky type of mood all week. Really no reason to be, but I have been. The husband helped a friend out Monday and Tuesday and didn't get home until late, so we didn't get out walks in. My co-worker hurt her back pretty good over the weekend, so no walk at lunch Monday and Tuesday...maybe all of that has something to do with my mood?

Anyway, I was inspired yesterday by Caitlin's Vegetarian Sloppy Joe's that she made the other night. And although I did not have all of the ingredients she used in hers I came up with my own using Morning Star Farms meatless crumbles! I also didn't have any type of bread to use except for some bagel thins...now it did taste awesome, but the mixture kept coming out of the bagel hole. LOL! I just used a fork and called it good. I will have to make these again very soon!

Regarding my 3-Day Walk - I should have my online store up and running very soon!!

Off to try a new recipe for dinner tonight!

Meatless Monday

Meatless since – 04/21/2010

Since Wednesday I have not had one bite of meat, and I have found it to actually be inspiring in some ways. I have had a blast searching out recipes and trying some new ideas out. Like last night, I made zucchini patties and yes they were missing a little something (maybe need to be spicier) but over all they were pretty good! I made enough to eat this week and even froze a couple for a later day. So, tonight while the family has chicken I will be having one of my zucchini patties!

Can I just tell you how awesome and inspired I have been feeling since I signed up for the 3-Day walk?!? Yesterday I worked on my personal donation page along with my blog journal for the event. My head is still spinning with things I need to work on, but I will try not to go into too many details on this blog and leave it for my 3-Day blog. Please consider donating just $10 per boob in your family!!

I am excited to start week 2 of the C25K program, although I plan on taking a day or two off from running. I am extremely sore from the Saturday hike and my run yesterday. I had hoped to walk tonight with the husband, but he’s helping out a friend today and will probably come home too tired to walk.

Does your dog look like you?

I got an email this morning from Hungry Girl with this website. Great site if you are a dog/cat owner and worry about the weight of your dog. Not only is my dog a redhead, but yes he is a little on the pudgy side. LOL! I need to remember that my dog counts on me for taking care of his weight, not like he’s going to hop on the treadmill while I’m at work or anything. If you are a pet owner check out the site it’s pretty cool!

Weekend Bliss

Friday ended just relaxing with the kids at home. I made a nice veggie tortilla pizza for dinner, again another non-meat day! I tried to stock up on lots of goodies at Wal-Mart to try to get us enough dinners for the upcoming week. My goal is to go meatless all week if possible, it's just really hard with the family but I think I came up with some pretty good options. We'll see what happens.

By the end of Friday evening I was getting a little hungry and I wanted something naughty to eat. I opted for some Greek Yogurt and strawberries. I heated the strawberries up first with just a little water on the stove top. I topped the yogurt with my warm berries, a little honey, some pecans and just a pinch of brown sugar...OMG...heaven! I basically cleaned out the cup in no time flat. Meg and I spent the rest of the evening getting things put together for our hike in the morning. We even put together a couple of Breakfast Oatmeal Cookies to have ready before we left the house in the morning.



Up again at 5am and both Meg and I were feeling much better this Saturday compared to last Saturday morning. The mountain was pretty quiet and this time around we saw lots of bunnies!! They are just too adorable. The cactus are all still in bloom, but you can tell they won't be around for much longer. Even the greenness is starting to turn more brown. We were all over the trails and even found some new routes. Meg started getting mean and had me going up some steep stuff and she yelled at me to "Keep moving mom!" We got a little over two hours in and looked forward to going home, eating and cleaning up for the day.



I promised the husband that I would make breakfast when we got home since he loves my bagel thin breakfast sandwiches that I make. I made mine without turkey bacon, and we sat outside and enjoyed breakfast together. Looking forward to a nice lazy day. It is amazing just how much better I feel when I start the day off right.

Later in the afternoon while watching the Suns game I made another batch of crackers and we enjoyed them hot out of the oven with some hummus. My husband just about ate them all!! I also cooked up some veggie pizzas again to enjoyed while siting out by the pool. It was such a beautiful afternoon. I did take some "me" time and enjoyed a nice nap with the puppies. I had the bedroom windows all open so we could hear the chimes, there was an amazing breeze coming in. Heaven!

Did treat myself to some Select 55 later in the afternoon. I did a new recipe for dinner, but sadly we ate it so fast that there are no photos. I made a spinach and artichoke lasagna that turned out perfect!

One of my weekend highlights was that I received my FIRST 3-Day donation!! My husbands fire captain/and friend donated $60!! A huge thank you for being my first!! I am so excited that I FINALLY committed to doing this.

Anyway, it 's now Sunday and I have already gotten my workout in for the day. I finished week one of the C25K program!! Woo-Hoo!

SIXTY Miles in Three Days....I AM DOING IT!!

If you notice the left side of my blog and my newest image over there…yes, it is true I finally did it…I signed up for the 3-Day Walk!! AAaahhhhhhhh!! I pretty much quit breathing for a few minutes after I hit that final submit button yesterday, but now I am committed and ready!

I will be walking in San Diego as part of my co-worker/friends team Hug 4 Jugs!! Wow, SIXTY miles in three days!! My daughter has taken on the roll as my fitness coach and my mom will help as my fundraising manager…gotta love family.

I warn you now; I have no shame when it comes to raising money so be warned now. I have been brain storming a few ideas and one for sure will be an online apparel store that I hope to have open by the middle of May. Lucky for me I work for a company who does this, so I plan on having several categories one being fitness wear for sure. The best part is that all items will be printed, so if you have an idea for something you would like to see on a shirt please just let me know…all proceeds will go to my 3-Day Walk donations!! Need to raise $2300 by November!! My head is already spinning with ideas for raising money and then there are all of the things that I’ll need for the walk. I plan on using my anal over organized skills and start putting ideas together this weekend.

When I got home last night I was really looking forward to some of my homemade crackers, but found the bowl almost empty!! My husband LOVED them and I even promised to make them Saturday. Thought it would be nice to have some fresh out of the oven with some hummus and hang out by the pool for the day.

The boys went out to the dirt bike track yesterday after my son got out of school. I planned easy tortilla pizzas for them to have once they got home. I was going to photograph, but was so hungry by the time we ate I totally forgot! LOL! I also roasted up some cauliflower to snack on while waiting to eat, this stuff is like popcorn so yummy. It was another meatless day for me! Still trying to figure out dinners still for next week.

I completed day 2 of week 1 of the C25K program. Then totally realized that iTunes has an app for that!! I will be downloading that this weekend for sure! Okay, I have never been an American Idol watcher…until this season and I will tell you I “heart” Lee. Omg, his songs just make me want to cry (yes, inside I am still a 13 year-old girl!). I downloaded a couple yesterday to enjoy during my workouts. I cannot wait until this dude makes an album!

With the weather warming back up for the weekend my daughter and I will be hiking tomorrow morning and then maybe I can even talk my son into a bike ride on Sunday. So ready for the weekend!!

Happy Earth Day!

Happy Earth Day to everyone! A long time ago I actually worked for an environmental firm, heck a couple of them. My mother also worked for an environmental construction company and my little sister is in the environmental field too! So, we have spent lots of Earth Days doing different events and enjoying this day. However, it seems like just lately I have started becoming more “Earthy” than in the past. I just don’t want to be that crazy “Earthy” mother I see at Trader Joe’s, the one that my daughter says she would disown me if I looked like! LOL!

A couple of things I do to be “Green”:

• I use my own mixture for fabric softener
• We recycle
• I wear more Organic type clothing, love anything bamboo!! Alo makes some of my favorite workout gear
• I bring my lunch everyday it containers I can wash and reuse and even bring it all in a bag I made
• Buying more organic when I can
• I am starting to eat less meat and more veggies
• We have changed out our light bulbs to fluorescent ones

Yesterday was a great workout day and I even looked forward to going home and starting my C25K program and even now I can’t wait for my 2nd workout of the week. I also had a total meatless day yesterday and did some internet searching for meatless recipes that the whole family would enjoy (this one is hard!).

Today, hopefully the work day will just go by smooth and quickly. LOL! I am so ready for a nice warm weekend. My daughter and I are planning another early morning hike on Saturday. I love starting the day off spending time with her!

Half Way There

It has just been a crazy week already!

Last night I got home and the husband joined me on a nice 1+ hour walk in the park. Always nice to get out and see some different sights. It was on the hot side somewhere in the 90 degree area...ugh, summer is coming!

So, for dinner I made MY version of KFC's new crazy chicken sandwich the Double Down that has 500+ calories. My version, less than 200 calories and the family LOVED them!! I baked the chicken, then sliced it open, used Laughing Cow Cheese and one slice of Turkey Bacon. The kids used their hands and ate it like a sandwich. LOL! I enjoy making dinner when everyone finishes their plates and beg me to make it again...soon!

The weather took a crazy change this morning and I don't think it even got to 70 degrees. Made for a nice walk at lunch with my co-worker. It has been crazy around the office and my sanity counts on my daily walk.

I had a crazy idea today and wanted to know if I could actually "make" crackers. I did a quick search and found a very easy whole wheat flour cracker recipe that I thought might be fun to try out tonight before dinner. I stopped on the way home from work and picked up a couple of items that I was low on, one being oatmeal....wow, I am loving this damn stuff!! I wanted to pick up a can of pumpkin, but can you say $$! Ouch, I'll have to check a few other places this weekend to see if I can find it for less.

Once home I looked forward (you heard me right) to hitting the treadmill and doing Day 1 of the C25K program! It felt great running/walking with the bedroom windows all opened up. Once done I even did a little strength training. Feeling pretty productive this evening.

My daughter was excited about making crackers, she even grabbed a box of crackers to compare ingredients of "store" crackers and my homemade crackers. Lets just say, there were a lot of words she couldn't pronounce on the box of store crackers. We made two cookie sheets of crackers, which only took minutes, and looked forward to them coming out of the oven. Once cool enough we cut them up and opened up the Sabra Hummus I had also just brought home from the store. OMG. That's all I have to say. We did add lots of other spices and are even thinking of other options...almond flour? What about even crushed up almonds?

Wheat Crackers

Ingredients

  • 1 3/4 cups whole wheat flour
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 cup water
  • salt for sprinkling

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, stir together the whole wheat flour, all-purpose flour, and 3/4 teaspoon salt. Pour in the vegetable oil and water; mix until just blended.
  3. On a lightly floured surface, roll out the dough as thin as possible - no thicker than 1/8 inch. Place dough on an ungreased baking sheet, and mark squares out with a knife, but don't cut through. Prick each cracker with a fork a few times, and sprinkle with salt.
  4. Bake for 15 to 20 minutes in the preheated oven, or until crisp and light brown. Baking time may be different depending on how thin your crackers are. When cool, remove from baking sheet, and separate into individual crackers.

Onward

Okay, coming to a lot of realizations last night and this morning.

One, I am never going to give up drinking 100% What I am going to do is make sure when I do drink it’s Select 55 (or another light beer) and I am not drinking away my weekends anymore (which can only be like three beers, but then it just makes me want to nap…I don’t drink a 12 pack or anything! LOL!). Go out for dinner, yes I might have a couple of drinks, but it will stop there.

Two, I really want to be a runner. Why? Hummm….I am 40 years-old and never in my life have been ANY kind of athlete and I would really like to know what it’s like to run a 5k and achieve something like that. My plan, I am going to do the Couch to 5k program starting this week!! I figure this week I will start on Wednesday and then Friday and Sunday. Wish me luck!! I have the training schedule all printed out and ready to follow. I was even inspired to print a cool Alo tank top to wear while running!

Oh, I do have one question if anyone can help…my breathing is normally my problem. I never know…best to breath through your mouth or nose?? I end up feeling like my lungs are on fire.

Three, I was so inspired by Caitlin’s blog today! I cannot believe how naive I am letting myself believe that everything we eat is okay for us. I would love to give up meat, so why don’t I? Why didn’t I buy organic milk this last weekend? My body is only going to give me what I put into it, so why am I harming it? Why am I harming my children’s bodies?? My husband….he’s on his own…lol only joking. I want to focus more on meatless cooking, less processed food and keeping myself educated on what’s going on out there.

Four, I want to do the 3-Day walk in San Diego later this year damn it!! I am tired of being scared at the thought of having to raise so much money when I know somehow it can be done! I am now 99.9% sure I am going to do it. My co-worker/friend in California has a team for me to join. Aaahhh…I am so excited!!! I have to thank my daughter for inspiring me by doing the Relay for Live on Friday. I figure if we could raise $125 in just a couple of hours, I am a lazy fool if I can’t raise $2300 in 7 months.

Maybe I am just having a mid-life crisis?? I want to take care of myself and accomplish things I never have had the courage to do before. I want to wake up everyday thankful to be in my body and use it to my fullest. As I have been hiking and working out I am starting to like the way my body is changing. I have started toning up and even my husband has been commenting on the changes. I love the idea of having an athlete’s body!

Anyway, 2010 was supposed to be a year of accomplishments and it’s about damn time I get to it. Originally I wanted to re-explore my creative side and I have let that fog my way. Maybe right now isn’t about being creative. Maybe my goals have changed. I just realized that it’s all good. Onward.

Sunday Recap

Happy Monday morning! I say this in hopes of pump myself up for the day, but really I could have stayed in bed for a few more hours today. I was happy with the 1.8 lb. lost this week. Thought it might have been a good two pound lost, but I was happy when my slacks this morning went on like butter and my husband kept telling me how great my legs looked all afternoon yesterday. Anyway, my goals for last week -

• One week NO alcohol – DID it! Not one drop all week!!
• Beat my personal best mile on the treadmill – Didn’t work out on the treadmill too much this week, but came close to beating it yesterday...still didn’t accomplish.
• Finish cleaning out my closet for the spring- My donation clothing is still sitting on the floor of my closet. Ugh.

Okay, this week goals –

Can’t think of anything exciting at the moment, so just staying on track with my eating and working out.

The rest of my weekend was actually pretty enjoyable. My 10 year-old son had been begging me to go out to the dirt bike track with him and dad (to take photos), so I decided if I was going to go I better do it before it hits 100, yesterday was 96 degrees so I was cutting it close.

I was up at 5:30 am and hit the treadmill for a power 20 minute workout. My husband had worked and wouldn’t be home until about 8am, so my goal was to have every thing ready to go when he got home. I showered, dressed, packed the ice chest and we were ready!

I even made breakfast bagel thin sandwiches for the ride out and even prepared a nice healthy lunch of chicken wraps and fresh fruit salad. I think the guys really loved the food over their normal peanut butter sandwiches. LOL! I was thankful we brought the enclosed trailer, made watching Matt out on the track much more enjoyable in the 96 degree weather.

We stayed until close to 2pm and were all ready to go home and enjoy a cold shower to rinse all of the dust off. Matt opted for jumping in the pool and swimming…way too cold for me!!

Did a little BBQing for dinner and made the most AMAZINING Sweet Potato Fries!! OMG, these things are to die for!! Crap, I can't find the recipe now! Ugh, well if I do find it I will make sure to post it.

All in all, a perfectly relaxing weekend! Can’t wait to do it again next weekend!!

Super Mom

I played the part of Super Mom yesterday. I busted out of work to head over to Wal-Mart to get my grocery shopping done in 30 minutes flat. Forgot a couple of things, but did pretty well. I was about ready to kill the young cashier dude, really can you move ANY slower?!?

Made it home it time to take my daughter over to the High School for the Relay For Life event. She had to be there at 5:30 pm and we made it right on the dot. I help for a few minutes by blowing up balloons for their table and met a few of her adorable friends. Also ran into a few other family friends I was surprised to see there. Meg was pretty quiet about the whole event and I had no idea she was Vice President of her school team! Using my Super Mom powers yesterday I rallied friends, family and co-workers to help me meet Meg's donation goal AND they helped pass it!! She was pretty shocked when she got home and found out, I had to help my girl out. Anyway, she had a great time but didn't do the sleepover thing. Maybe next year. She loved the high school boys in the tent next to them. They were selling rides in shopping carts around the track, but I think they just liked the idea of the high school boys giving them rides..heeheee....




After dropping off the daughter it was time to take the boy child over to Target to pick up something I promised him last week. We made it home in time for him to take off with his buddy for a sleep over. Super Mom, got to enjoy a quiet dinner with the dogs and did a little magazine reading...heaven. I had some leftovers from the night before and made a nice little Bagel Thins sandwich, yummy! I was back at the High School by 9pm to pick up Meg and then it was bed time for Super Mom. Super Mom needs a good 8 hours of sleep to recharge her super powers.

This morning at 5am Meg and I were up enjoying the breakfast cookies I made the night before. I actually had mine in a pie pan so I could heat it up in the oven since the microwave was still dead. I had bought some chocolate almond butter at the store and some mini chocolate chips (for Meg's) and OMG, so good!! We made it to South Mountain by 6 am and hiked for over two hours! A few more people out early this time, but with the weather hitting the 90's today I don't blame them. I did find a waist pack at Wal-Mart for only $9.89 and it worked great! We were able to carry our water, camera, iPod, phone, power bar and car key! Did the job even though I might have looked like an idiot! LOL!

Once home we cooked up some Bagel Thins and eggs and now enjoying some hot coffee. What a great way to start off the day. Not too much to do today, maybe Costco and Sprouts but that is about it. I do see a nap in my future!

Thursday Night Triumph

I knew the whole way home from work yesterday that I really, really wanted pizza and beer for dinner. How could I only go FOUR flippin’ days without beer?!? I had everything at home to make dinner and planned on making more than enough so both the husband and I would have left-over’s for lunch the next day.

I sat there in the recliner looking over at my husband on the couch trying to read his mind, I knew though; he wanted pizza and beer too. At one point he said, “Let’s go.” I said okay and then remembered that I would sleep like crap and feel like crap the next day. Somewhere from inside me I told him, “No, I’ll make dinner here.” He was a little pissy for a couple of hours, but I can’t believe I did it!! I wanted to scream from the backyard…”I won!!” LOL!

The husband was also nice enough to join me for a walk after dinner. It’s getting to be about that time of the year when we need to eat earlier and walk later. We hit our first 90 deg day yesterday! Ugh, summer is around the corner.

Looking forward to this weekend. Meg and I are going hiking on Saturday. I am hoping to find some type of pack that we can use for the car key, phone, iPod, water, etc. tonight while out and about. I promised my son to go out to the dirt bike track with him on Sunday to take video/photos. Ugh, it’s going to be so hot!! Packing up some fun food and treats though. Maybe I will even get some reading done!

One Year Ago Today

It is so hard to believe that it has been a full year since the death of our beloved family dog Sadie. We still come home from dune trips and exptect to find her waiting at home for us. I wanted to share a post I wrote a year ago today in honor of Sadie:

Good-Bye Sadie

My morning started off as any normal morning. Shower, make-up, coffee, breakfast, waking the kids up, etc. Then our 15 year-old boxer/lab mix Sadie had a seizure on the living room floor when I sat down to eat. I have never experienced seeing this human or canine. Really scared the heck out of me. I quickly had Matt take Avery (our pup) into the bedroom and tried to find the number for an emergency vet near by. I fumbled around through the yellow pages with no luck of an office open and grabed my iPod to check on the internet. My fingers where not moving well as I was shaking and having a hard time seeing through the tears.

Once I finally got through to someone it was over and Sadie was very confused and had no movement in her hind legs. I tried to sit with her while trying to figure out just how to get this 60+ dog into the car by myself. John is out at PIR for the NASCAR race this weekend and called him at 6:30 am to let him know what was going on…wasn’t in a calm state mind you.

Sadie has been having lots of balance issues the last couple of years and we really didn’t think she had much longer in her poor old body. Just this morning she fell as she came in from the doggie door, and John told me she fell a couple times yesterday morning also.

I had made the decision to take her in and have her put down. It was in the best interest for Sadie, both John and I knew this. Meg and Matt cried as they tried to hold Avery back so I could carry Sadie out to the car.

The emergency vet I went to was amazing and helped me carefully get her out of the car and bring her in. They agreed with me that it was time to let Sadie go and let me spend some time alone with her. When I was ready I held Sadie’s big crazy head in my arms and she softly fell asleep. It was amazing to see the pain in her body just disappear as she looked so peaceful.

I left the vet’s office with my black sweater COVERED with Sadie hair. The same hair we complain about in the pillows on the sofa, in the carpet and on all of our black clothing. I went home to change before going into work; still I’m finding Sadie hair here and there. I don’t mind so much today.

We love you Sadie. We will miss you.

Getting Too Old!

I think I am too old for this hiking stuff. LOL! It was funny, but right before we headed out to go hiking I received an email from Shape regarding hiking. They had a recipe for a pretty tasty looking mix that my daughter and I might have to mix up and try before our hike this weekend. Anyway, my co-worker and I had an awesome hike yesterday after work. We got up there before the after work crowd really hit and there was a nice over cast in the sky to keep it cooler. Some how we found the Javalina trail and it was a rockin’ workout! We ended up doing almost SIX miles in less than two hours!

When I got home I took a nice long extremely hot bath in hopes that my body would forgive me today…no such luck! Feeling a little sore and have this crazy headache, but I think that’s because I missed my morning coffee. Damn coffee maker is dying too. First the microwave, the toaster is acting up and now the coffee pot. I made the decision to visit McDonalds for a sugar-free iced coffee, much needed today.

Not sure how much walking I will get in today, but with the weather heating up it will either be an early lunch walk or an after dinner walk.

Middle of the Week

After rushing home from work yesterday I quickly whipped up a chicken meatloaf for dinner and left instructions for my daughter on when and how to put it in the oven. The husband and I drove over to the park to get our walk on. We came close to doing five miles in just a little over an hour. I had hoped to do some running, but his knee started bothering him, so we stuck to walking. I felt great by the time we got home and our light dinner really hit the spot!

This morning my husband asked my to make him the bagel thin breakfast sandwich I made for him on Sunday, and I actually didn’t have one because I was looking forward to my oatmeal breakfast cookie!! I can’t believe I actually “looked forward” to it!! My husband says I need to give cottage cheese that same dedication and maybe I would learn to love that too. Not too sure about that…one thing at a time.

Today after work my co-worker and I are going hiking!! I am so addicted now that I know it’s only minutes from work and I’m out in the beautiful desert. One thing I do want to do this weekend is look for some type of pack for carrying my iPod, cell phone, car key, water, etc. Any ideas?? I don’t want to spend much, but I need something!!

The other day I was inspired by a KFC commercial for this new chicken sandwich thing (the KFC Double Down) they were showing. Now fast food is not a downfall of mine or anything, but this sandwich made me think. I was telling the family that next week for dinner one night I was going to buy chicken breast, slice then in half the long way, cook them, then spread Laughing Cow Cheese on top of one of them, add two slices of Turkey Bacon and then top with the other half of the breast…they were totally excited! The KFC sandwich runs 460+ calories where mine will only be 215 calories...and I am sure you get more with mine. Stay tuned, it will be fun to see how they turn out next week.

Tuesday - Feeling the Love

Woke up not only feeling better but ready to take on the day! I had some extreme PMS yesterday and had to keep reminding myself not to quit my job and walk out the door. At one point I had left my office and someone walked out the front door slamming it and my poor co-worker in the office next to me was pretty sure it was me just up and leaving. LOL!

Enjoyed a nice walk during my lunch break, but was starting to really drag by the time I got home. I forced myself on the treadmill, but could only get myself to stay on for about 20 minutes. I did feel a little better and finally sliced up all of the fruit I bought over the weekend. I am loving the fresh pineapple! I also took the time to upload some new music for my iPod and changed around my workout mix some, that always helps keep me motivated while running. Thanks Shape for the recommendations!

Dinner turned out amazing! We had left over pork from the night before, so I used one of my carb smart tortillas and heated that up on the stove top. I lightly brushed it with olive oil then topped with the shredded pork, then added sliced up tomato, onions and artichoke hearts. I heated up under the broiler for a few minutes and added some avocado to finish it up with. OMG, amazing!! My husband was working, but said he would be calling me up today to walk him through it so he could make it for lunch. LOL!

I also made my breakfast cookie for this morning adding up the calories as I did. Holy heck, I had no idea how MANY were actually in that sucker. However, I have taken in to count that when I eat one of these in the morning I don’t need a mid-morning snack, they do hold me over to lunch very well. And, I am actually starting to like them! I did just realize that I can’t look at it when I am eating it, still looks pretty gross to me.

The scale showed me some love today, and with feeling better today I am looking forward to my lunch walk and then walk/running with the husband tonight. Making BBQ Chicken/Turkey Meatloaf that the family liked so much from the Biggest Loser Family Cookbook.

A New Day

I seriously thought about lying about my weight today. I really let go yesterday and I’m kicking myself today. I know the weight is mostly water weight and it will come back off, but what a stupid way to end my 21 Day Challenge. Today is Monday though and I am going to move forward, be honest with MYSELF and stay positive!

Sunday - Recap
I woke up yesterday feeling great my weight was down to 149.8!! I ran on the treadmill for 35 minutes, and then relaxed out back waiting for my husband to get home from NASCAR.

Made another amazing bagel thins breakfast for my husband and myself and cleaned up to start the day. I wore my new shorts and adorable tank top and my husband just wouldn’t stop with the complements. He told me how great my arms looked and how my legs were toning up so nicely. It was so sweet to hear!!

Then later he wanted to go to lunch, start my downhill fall for the day. Beer is the enemy. They are my “potato chips” and I can never just have one. We enjoyed a great lunch, splitting a sandwich (actually only ate ¼ and brought the rest home for my daughter). However once we got home it was more beer out by the pool and then somewhere during that time I brought out left over chips and dip from NASCAR…ugh. Come dinner I could hardly eat because I felt like total crap. Not how I planned my Sunday to go. Suck.

My plans for today – a 30 minute walk at lunch and then 30 minutes on the treadmill tonight. Slice up all of the fruit I bought over the weekend. Maybe a nice hot bath to end the evening?

I have decided to set a few goals for myself this week:

• One week NO alcohol
• Beat my personal best mile on the treadmill
• Finish cleaning out my closet for the spring

Having forced myself to eat oatmeal I am actually starting to enjoy my morning breakfast cookie!! I made up one last night while my husband made fun of me and my cookie. However, I heated it up this morning at work and really enjoyed the damn thing! Love the dried fruit and almonds in it. I need to take the time tonight and figure out how many calories are in it.

Day 20 - Start of the Weekend

I was finally able to leave work a little after 2pm yesterday, even though I had my 40 hours in before 10:20 am that day...ugh. Anyway, thought I would take advantage of some "me" time and went over to Nordstrom Rack to check the place out. Wasn't too thrilled with the prices on the shoes, but I did find some really nice black dress pants for work and only $29. After I went over to Ann Taylor Loft to look around, but wasn't sure about a few pieces I liked and decided to wait until later after I spoke to the husband to see if I could do a little damage (I did have a coupon!).

Hit Old Navy later with the kids and yuck! I don't understand how I wear a size 6 at Ann Taylor but need a size 10 at Old Navy?!? Wait, my jeans there are a size 6....I give up. Wasn't impressed with their summer stuff.

As promised to my children we went to In-n-Out Burger for dinner, or they did I just watched them eat. I was good and waited until later and had a salmon burger on spinach.

After grocery shopping the daughter and I went back over to Ann Taylor Loft (permission granted to shop) and ended up with two pair of shorts, a cute tee and awesome tank top! The shorts are more on the longer/cargo length but I feel more comfortable in them than the short shorts.

Last night I also gave a try to my third breakfast cookie. This time after stocking up on a few things at the grocery store I added dried cranberries, coconut and almonds. Looked pretty good.

Meg and I were up at 5am and ready to go hiking this morning! I was excited to heat up my breakfast cookie and try out my newest flavor. I put the cookie in the microwave for 30 seconds...still felt cold...another 30 seconds....still cold. Okay, something is not right here. Finally came to the conclusion that rest in peace, our beloved microwave had kicked the bucket. Ugh. Why does SOMETHING always happen when my husband is at NASCAR?!?

This is the best - I tell Meg that she won't be able to make her oatmeal in the morning in the microwave and will have to heat the water up on the stove top. She tells me, "That's so Survivor mom!" Since when did not having a microwave make you primitives? LOL!

Okay, back to the cold breakfast cookie...again had to choke it down and only ate half I just cannot do the cold oatmeal thing. Meg ended up finishing the rest for me and then we were off to go hiking!!

The weather was cool and amazing. We were among some of the first people there and parked near the entrance. We ventured onto so many different trails and at times felt like we were MILES away, until we would get up high and see our car off in the near distance. LOL! I love hiking South Mountain, you really can't get lost. We did run across a Jack Rabbit and a family of Quail. A lot of the cactus are also blooming and looked beautiful as the sun was coming up.

We left two hours later and boy the place was getting busy. There wasn't even a parking spot to be found, which is why we came so early. Meghan loved it and asked to go again next weekend! It was such a blast!!


We came home starving, so I made breakfast using the new Bagel Thins I bought yesterday. We toasted them up, spread a little Laughing Cow on them, topped with egg whites, Turkey Bacon and a dab of salsa. Amazing!!

Well, cleaning is done and time to finish up buying just a couple of things for dinners this week and then it's time to relax!!

Day 19

Yesterday was another amazing day!

I stayed on track with my eating all day, and seemed to be munching on one fruit or another most of the day. Enjoyed a nice 30 minute walk at lunch with my co-worker. Then after work my out of town co-worker/friend and I went hiking! We debated most of the day mostly because the snakes have started to come back out and we are both a little terrified of the idea of running into one of these suckers while out hiking.

It took us until almost 5:30 pm to actually leave the office and at first we kind of debated about just going to the park or maybe just dinner. However our boss told us we would be missing out if we didn’t do the hike. I had NO idea the trail is less than 10 minutes from our office door! We were both so happy that we actually did the hike. We did almost four miles, the weather was beautiful, the cactus blooming and NO snakes!! Once done with the hike we both felt so much better and it made for a nice healthy dinner option at the salad bar place instead of Outback eating crap and drinking.

My daughter and I area even discussing waking up early tomorrow and driving out there to go hiking for a couple of hours. I really enjoyed that it wasn’t too steep and it didn’t feel like you had to watch ever step in hopes you wouldn’t twist your ankle or something.

So, I made another oatmeal breakfast cookie last night and brought into work with me today. I did forget to add honey, but sprinkled a little brown sugar on top. My plan today was to heat it up some and maybe that would be better than ice cold. My verdict….still taste like oatmeal and I’m slowly choking it down with a cup of coffee. LOL! I am damn and determined to get this thing done. I will tell you if I am hungry in a couple of hours I am going to be pissed!!

Trying to pre-plan out our family dinners next week to keep thing healthy. I promised my kids I would take them to In-n-Out Burger tonight for being so good this week. My daughter has found about animal style French fries, so needless to say I will be eating a salmon burger when we get home. Ugh!!

Day 18

Happy to report that yesterday was a much better day and I am feeling 100% better today!

Work has been busy and I was a little worried about getting our 30 minute lunch walk in, but my co-worker would not let me skip it and off we went. I love getting out and enjoying the day if even for only 30 minutes. We also all went over to Jimmy John’s for lunch. I had never heard about it, but my out of town co-worker/friend who is from Chicago flipped when she saw it just minutes down the street from us. I skipped the mayo on my sandwich and only had half yesterday along with some fresh pineapple. I will enjoy the other half for lunch today.

When I had gotten home from work my 13 year-old daughter wanted to go over to Target and I told her we could go, BUT we had to walk. It’s only about a 16 minute walk not too bad. We didn’t find anything, but it was a great way to get out of the house for awhile and get some physical activity in!

I made a tasty dinner using a bunch of fruit for a nice fruit salad and cooked up a salmon burger and had that on lettuce/spinach topped with a little Sabra hummus and buffalo sauce (to spice it up). So filling!! My son had a turkey burger and was shocked when he saw the fancy fruit salad I put together. He’s getting a little better about trying new foods and ended up loving the blackberries.

Seeing oatmeal breakfast cookies on a lot of blogs the last couple of weeks. Normally I am NOT an oatmeal type of person, love oatmeal cookies, not crazy about a bowl of oatmeal. However, I though why not give it a try. They look so filling and perfect for the morning. My daughter helped me out and we pulled everything together, mixed it all up, poured it out, covered and refrigerated. I couldn’t wait to get up this morning and sit down to enjoy (I hoped) it with a hot cup of coffee. I was able to get down about ¼ of it, but really I couldn’t get over the fact that it was kind of like eating cold oatmeal….icky. I defiantly think it something that I need to maybe add a couple other ingredients to, or force myself to eat and just get over the whole “cold oatmeal” thing. I was pretty filling, and my daughter ended up eating the rest and loving it!! I might have to make this for her next week when she had AIM’s testing to help fill her up.

My co-worker and I have talked about going to hike the mountain after work today. Really I am not much of a hiker. My husband and I do this on trail over by his station, but that one is too far to do today. I am not a fan of heights so, I don’t like the mountain trails that have steep drop offs or anything like that. With the weather being in the high 80’s today I will be really nice to get out for awhile and enjoy it. Just wish me luck!!

Day 17

Well, all I can say is that the day started out great but went downhill quickly. LOL!

We started taking our “lunch” walk a little earlier now as our days are starting to heat up quickly. So, at about 10 am we headed out and enjoyed the amazing Arizona spring weather and got a great 30 minute walk in.

When I had gotten home from work I made a very yummy green smoothie. I used ½ banana, mango, strawberries, spinach, crushed ice, cinnamon and a little water…OMG, loved it with the mango!! I then enjoyed a little of my Sabra hummus and a healthy tortilla. Since I got home early yesterday I in hopes to spend some time with my husband I was getting a little cranky that he was out in the garage and not hangin’ with me. I think he finally saw I was getting antsy and asked if I would rather go out to our pizza place for dinner…..dear Lord I really really wanted to do that over a salmon burger for dinner.

So, we went to our favorite little joint for dinner…spinach dip (amazing bread, or maybe it was just the fact that it was “bread”), four beers and a small veggie thin crust pizza. WAIT it doesn’t stop there….brownie and ice cream after at home with the kids. Can you start to see my weekly pattern of doing this once a week? LOL! Heck, I figure if it’s only once a week than be it.

I was reading my Hungry Girl email this morning and loved how she was talking about "flexitarian.” I love this!! There is no way I could really ever be a vegetarian 100% since I do love to have meat ever once in awhile. I do try to eat as little meat as possible, so hey I think I might be a “flexitarian”!! I am going to have to check out the book, “The Flexitarian Diet: The Mostly Vegetarian Way to Lose Weight, Be Healthier, Prevent Disease and Add Years to Your Life.” Reading through what all the book is about looks really interesting. Might have to order this today.

Looking at another change in my life, maybe finding a new job. Not sure yet, but I did drop off a resume yesterday and they seemed pretty interesting. I will see today if she calls for an interview, but we did talk for awhile yesterday. Not sure if it’s what I want to do, but I have started keeping my eyes open to see if anything looks exciting.

On to a better day today. I know I’ll be good the rest of the week, especially since I feel like CRAP today. Ugh, my stomach hates me right now. That’s what I get for being so naughty yesterday. Lol!

What a great day yesterday!

Due to our internet and phones being down part of the morning yesterday, my co-worker and I decided we may as well get our lunch walk in early. The weather was perfect and made for a great way to start the day. My out of town co-worker was also here and stayed with me last night, so on the way home we stopped at the park and did almost FIVE miles!! Woohoo, what a great way to end the day. I did great with my calories for the day and felt great pretty much all through the day.

My husband takes off for NASCAR tomorrow, so I am really looking forward to leaving work early today and spending some time with him. Not sure what’s on the dinner menu yet.

Today is the ordering day for the Bountiful Basket and I am starting to think that I might be an addict! LOL! I wasn’t going to order another basket this due to the fact that my husband I both don’t get paid until next week. However, then I sit here and start adding up the same stuff I would buy when I go to Wal-Mart on Friday and crap I would probably end up spending more! That and there’s something about picking up your basket and seeing what kind of goodies it holds. I over think things way too much. LOL! As I sit here and type this I am enjoying a nice plate of pineapple and orange from last weekend’s basket…oh, the delish!!

Brought to you by the letter “E”

Today’s blog post is brought to you by the letter “E” as in Easter and Earthquake.

We spent the later part of Easter Sunday sitting out back by the pool just relaxing and hanging out. My mother-in-law had made up some nice little cheese and olive platters for us to snack on white the turkey was finishing up. As we were sitting there I notice the pool water kind of sloshing around the skimmer. My first though was a bird dove in; it’s happened before, but then the water starting sloshing around harder and was coming out of the pool near the steps. Normally this only happens when the kids are in there making waves with their pool toys. This lasted long enough to really sit there and watch. We never felt the ground move, but we were pretty sure it was an earthquake. We heard our neighbors yelling about it too, so I quickly grabbed my iPod and goggled “Earthquake” and sure enough saw that Baja had gotten hit pretty good.

The earthquake made for a pretty interesting Easter to say the least. The boys had a great time out at the dirt bike track and met some new people. Dinner was amazing, but on the lighter healthy side. Overall, the perfect weekend. I have a horrible case of spring fever right now!!

I was a little disappointed that the scale did not go down last week. However, I do know that I did great eating and working out. My clothes are also fitting really nice, so hopefully I will see something next week. I also did lose quite a bit of weight the week before and in the past my second week will be normally be quiet. So, keeping positive and focused!! I have been feeling awesome!!

Happy Easter

Last night I had fun at dinner trying something new! I made Sweet Potato Gnocchi!! I wasn't sure how it turned out, since I have never made it before (and note, I am not one bit Italian!). However, my husband has had it before and said mine was perfect! He could have just been nice and maybe it did suck. LOL! Anyway, it was fun and everyone did seem to enjoy it.

After dinner my daughter challenged us all in a game of badminton. It was more funny to watch than anything. Meg loved slamming the birdy into dad and I had a thing with swearing when the bird came smashing at me. I laughed so hard I could have peed my pants several times.

This morning I started the Easter day off right and ran on the treadmill. Made a nice egg white scramble with a veggie sausage patty. You may wonder about the Christmas coffee mug, but it's my "weekend" mug. I don't know, it just makes the weekend days start off perfect for me. LOL! Got cleaned up and have spent the day cleaning, laundry and a quick trip to Starbucks with my daughter. I was good and just had an iced skinny vanilla latte, my favorite drink there. The boys have spent most of the day out at the moto park, so I did have to get the turkey on the smoker. Hopefully it's cooking okay.

I did stop at the grocery store today and picked up some Sabra hummus I keep hearing how wonderful it is. I love hummus, and my goodness everyone is right! This stuff is amazing!! I also googled how to cut up a pineapple and sliced up the baby we got yesterday in our fruit/veggie basket. Another amazing treat today!!

The scale has not moved too much this week, but it's okay. I have not been binge eating and my clothes are fitting really nice today! Looking forward to working out next week. I have a co-worker from out of town here for a couple of days and we have some after work workouts scheduled!

Day 13

After getting home early from work yesterday we hit Wal-Mart and got that out of the way of our weekend. I couldn't believe how busy they were, normally later in the evening it's pretty quiet. We made it home in time to get a nice walk in. This time I took my husband along since he doesn't smack me in the butt when we walk and force me to run! LOL!

I couldn't wait to make dinner and pulled out our Biggest Loser Family cookbook. The meatloaf was another two thumbs up dinner from the family! I have really enjoyed using their recipes and have found them to be easy and quick. All of the things a busy mom looks for!

We also decided it was time to cook up the Fennel. I chopped it up and cooked it along with some sweet potatoes in a little olive oil and salt. It turned out pretty good. I read that you should cook it as soon as you get it or it starts to lose it's flavor, which it was a little bland. The sweet potatoes were good though!



This morning we woke up by 6 am and took two of the dogs out with us for a walk. I love the quiet peaceful mornings! After about 35 minutes we dropped the dogs back off at the house and picked up our bags and walked over to the park to get our Bountiful Baskets of goodness!! Wow, what a difference between the organic and regular baskets (this week was the regular basket) and thank goodness I had my husband with me....TONS of stuff!! The kids loved when we got home and pulled everything out.

We spent the day at the mall and did a little shopping. My daughter really had her eye on a pair of shorts at Forever 21 and just by chance the had two pair left....one in her size!! I picked up a cool tank, but at lunch realized it had a hole in it! Of course it was the only left. Bummer. Was a little pissed that they wouldn't put the money back on my debt card and I have to wait for a check....i didn't "return" it because it didn't fit, it was damaged! Anyway, did find another top at Ann Taylor Loft. We also enjoyed a wonderful lunch out on the patio, very yummy pizza. I was good and only had a piece and a half AND water to drink!

Day 12 and Friday!!

Made it to another Friday and again the weekend coming is looking perfect. Weather should be back in the 80’s and we will be spending lots of time out in it!! With it being Good Friday today we are planning on closing a little early for the day, so I will be able to hit the grocery store early and get that out of the way.

Yesterday when I got home from work it was just too nice to not get out and walk. My husband was still feeling under the weather and I really didn’t’ feel like taking the dogs out with me, and I hate walking by myself. I asked my 13 year-old daughter to join me and after much begging I finally talked her into it. Mistake! The kid was killing me. She made me run and when I wasn’t running enough she would smack me on the butt! LOL! Her walking pace was also much quicker than my husband and we were booking. I need to take her out with me more!!

The rest of the evening was nice and relaxing. Made the Crusted Almond Chicken Fingers and yams for dinner. Hung out on the couch and watched my guilty pleasure show The Real Housewives of New York (Orange County is my favorite).

We decided on trying another Biggest Loser Family Cookbook recipe for dinner tonight. It’s some kind of BBQ Turkey Bacon Meatloaf, and then I think I will cook up that Fennel to have along with it.

I was thinking about this 21 Day Challenge that I am doing and at the beginning I wrote about a few things that I wanted to accomplish during this. One being alcohol. I did drink the other night, but I’m not going to let that discourage me or anything. More than anything I didn’t want to be drinking more than once a week. Come this time of the year it’s so easy to sit outside at night and have a few beers and relax…however that means no working out and usually eating junk for dinner. I am on day 12 today and I have had one evening of drinking (and that damn brownie & ice cream). Not too bad if I do say so myself. We have been eating at home preparing healthy meals and I have been feeling so much better! So, during this 21 days I just want to stay on focus with eating right, working out and taking care of myself. That’s all you can do, right?

Tomorrow we pick up our baskets of fruit/veggies and can’t wait to see what we get again!!
